Description

This Valentine's Day Skillet Cookie is a warm, gooey, and festive treat perfect for sharing. Made with rich butter, a blend of white and brown sugars, eggs, vanilla, and loaded with mini semi-sweet chocolate chips and colorful holiday M&Ms, this cookie is baked right in a cast iron skillet for a perfectly chewy center and crispy edges. It’s a delightful dessert to celebrate the holiday and impress your loved ones.

Ingredients

Scale

Cookie Dough

  • 1 cup butter softened (2 sticks)
  • 3/4 cup white granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups unbleached flour
  • 1 teaspoon baking soda
  • 1 teaspoon table salt
  • 12 oz mini semi-sweet chocolate chips
  • 1 package holiday M&Ms or Peanut Butter M&Ms divided (use Peanut Butter M&Ms for this recipe)

Instructions

  1. Preheat and Prepare Skillet: Preheat your oven to 325 degrees Fahrenheit. Grease a 12-inch cast iron skillet thoroughly with butter to prevent sticking and add flavor.
  2. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, white granulated sugar, and brown sugar using a fork or a hand mixer until the mixture is light and fluffy.
  3. Add Eggs and Vanilla: Beat in the eggs and vanilla extract until well combined and smooth.
  4. Combine Dry Ingredients: Stir in the unbleached flour, baking soda, and table salt into the wet mixture, mixing until all ingredients are incorporated and the dough forms.
  5. Mix in Chocolate and M&Ms: Fold in the mini semi-sweet chocolate chips and half of the holiday or peanut butter M&Ms. Save the remaining M&Ms for topping after baking.
  6. Shape and Bake First Stage: Press the cookie dough evenly into the prepared cast iron skillet. Bake in the preheated oven for 25 minutes.
  7. Add Toppings and Bake Final Stage: Remove the skillet from the oven and sprinkle the reserved M&Ms evenly over the top, pressing them gently into the cookie dough. Return the skillet to the oven and bake for an additional 8 minutes or until the center is set but still soft.
  8. Cool and Serve: Remove the skillet from the oven and allow the cookie to cool in the pan for 30 to 45 minutes to fully set the center. Serve warm optionally with ice cream for a gooey and indulgent treat.

Notes

  • Use a 12-inch cast iron skillet for even baking and a nice crust edge.
  • Make sure the butter is softened, not melted, for proper creaming with the sugars.
  • You can substitute holiday M&Ms with regular or peanut butter M&Ms depending on preference.
  • Let the cookie cool completely in the skillet to avoid a gooey center that might fall apart when slicing.
  • If you don’t have a cast iron skillet, a similarly sized oven-safe pan or round cake pan can be used but may alter the baking time slightly.
