Description

A hearty and flavorful Sloppy Joe Bowls recipe featuring savory ground beef in a tangy tomato sauce paired with roasted spiced sweet potatoes, topped with fresh dill pickles and red onions for a delicious, wholesome meal.

Ingredients

Scale

Roasted Sweet Potatoes

  • 2 medium sweet potatoes cut into 1/2 inch cubes (about 3 cups)
  • 2 tablespoons avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Sloppy Joe Meat

  • 1 pound lean ground beef
  • 1/2 cup diced yellow onion
  • 8 ounces tomato sauce
  • 1/2 cup ketchup
  • 1 tablespoon honey
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 1 teaspoon dried mustard
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt or to taste
  • Freshly ground black pepper to taste

Other Ingredients

  • Dill pickle slices
  • Sliced red onion

Instructions

  1. Preheat and prepare sweet potatoes: Preheat oven to 425° F and line a baking sheet with foil or parchment paper. Toss the sweet potato cubes in avocado oil, chili powder, garlic powder, salt, and pepper until well coated.
  2. Roast sweet potatoes: Spread the sweet potatoes evenly on the prepared baking sheet and roast for 30 minutes, tossing halfway through, until tender and slightly caramelized.
  3. Cook ground beef and onions: While sweet potatoes roast, heat a large skillet over medium-high heat and drizzle with a little oil. Add ground beef and diced yellow onion, cooking until beef is browned and onions are tender. Crumble the beef as it cooks.
  4. Add spices and sauce: Stir in chili powder, dried mustard, celery seed, garlic powder, kosher salt, and black pepper. Then add tomato sauce, ketchup, Worcestershire sauce, and honey, stirring to combine everything evenly.
  5. Simmer Sloppy Joe mixture: Reduce heat to medium-low and simmer the beef mixture for 15 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
  6. Assemble bowls and serve: Divide the roasted sweet potatoes and Sloppy Joe meat evenly into bowls. Top with dill pickle slices and sliced red onions or your preferred toppings. Serve immediately.

Notes

  • For a vegetarian version, substitute ground beef with plant-based crumbles or lentils.
  • You can swap avocado oil with olive oil if preferred.
  • Roast sweet potatoes until just tender to maintain some bite and texture.
  • Adjust seasoning and spice levels to taste, especially the chili powder and salt.
  • Serve with additional toppings like shredded cheese or sour cream for extra richness.
