Sweet Potato Fries

- Bake the Fries: Place the baking sheets in a preheated oven at 475 degrees Fahrenheit. Bake for 30 minutes, turning or flipping halfway if desired, depending on the thickness of your fries, until crispy and cooked through.
- Prepare Marshmallows for Toasting: While the fries are baking, line a separate small cake pan with tin foil and arrange the marshmallows in a single layer.
- Toast Marshmallows: Add the marshmallow pan to the oven alongside the fries. Toast for about 5 minutes until marshmallows puff up and begin to brown lightly for a toasted flavor.
- Blend the Dip: Transfer the toasted marshmallows into a blender. Add the heavy cream. Since marshmallows are sticky, scrape off any excess from the pan to include. Blend until smooth and creamy, adding a little more cream if necessary to reach desired consistency.
- Season Fries and Serve: Remove fries from the oven and taste to adjust sea salt as needed. Serve the hot, crispy sweet potato fries immediately accompanied by the warm toasted marshmallow dip.
