This Reuben Egg Rolls recipe transforms the classic deli sandwich into a crispy, handheld appetizer or snack. Filled with savory corned beef, tangy sauerkraut, and melty Swiss cheese wrapped in crispy egg roll wrappers, these egg rolls are perfect for serving with Thousand Island dressing for dipping. They can be cooked using an air fryer, stove top frying, or baked in the oven for convenience and versatility.

- 12 egg roll wrappers
- 2 tablespoons oil (for cooking)
- Thousand Island dressing (for serving)
Filling
- 500 grams corned beef (approximately 10 slices)
- ½ cup Swiss cheese (or mozzarella cheese, approximately 5 slices)
- ½ cup sauerkraut
Instructions
- Prepare the Filling. Dice the corned beef into bite-sized pieces. Dice or shred the Swiss cheese or mozzarella cheese. In a medium-sized bowl, combine the corned beef, cheese, and sauerkraut, mixing until evenly incorporated.
- Assemble the Egg Rolls. Place 1 to 2 tablespoons of the filling in the center of each egg roll wrapper. Dip your finger in water and wet the edges of the wrapper. Fold in two opposite corners toward the center and then tightly roll the wrapper around the filling. Repeat with all wrappers.
- Air Fry Method. Brush both sides of the egg rolls with oil. Air fry at 400°F for 10 minutes or until golden brown, flipping halfway through if needed.
- Stove Top Method. Heat oil in a deep pot over medium heat. Fry egg rolls in small batches for 5 minutes or until golden brown and crispy. Drain on paper towels.
- Oven Baking Method. Brush egg rolls with oil on both sides. Arrange on a sheet pan lined with foil or on a baking rack. Bake at 400°F for 15 minutes or until golden brown, flipping halfway through and brushing with more oil if needed.
- Cool and Serve. Allow the egg rolls to cool for 2 to 3 minutes as the filling will be very hot. Serve with Thousand Island dressing for dipping and enjoy!
