Chocolate Base
- 4 cups milk chocolate chips
- 2 tablespoons butter or margarine

- 8 red velvet sandwich cookies
Instructions
- Prepare Cookies: Place the red velvet sandwich cookies in a ziplock bag and use a heavy pot to break them into small pieces.
- Melt Chocolate: Put the milk chocolate chips in a microwave-safe bowl. Microwave on high for 1 minute, then stir. Continue microwaving in 30 second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Add Butter: Melt the butter or margarine separately. Pour it into the melted chocolate and stir well to combine for a smooth texture.
- Spread Chocolate: Line a cookie sheet with foil. Pour the chocolate mixture onto the foil and use your hands or a spatula to press it out evenly over the surface.
- Add Toppings: Evenly sprinkle the broken cookie pieces and mint M&Ms over the chocolate. Gently press them down to embed them into the chocolate layer.
- Chill: Place the cookie sheet in the refrigerator and chill for at least 1 hour to allow the bark to set completely.
- Serve and Store: Once set, break the bark into pieces. Store any leftovers in the refrigerator to keep it fresh.
