Mushrooms and Buns

  • 2 portobello mushroom caps (about 1/2 lb. total)

  • 1 cup spring mix
  • 1 tomato
  • 1/4 red onion, sliced into rings
  • 4 Tbsp mayonnaise


Instructions

  1. Prepare the Marinade: In a small bowl, combine olive oil, soy sauce, apple cider vinegar, brown sugar, oregano, garlic powder, onion powder, smoked paprika, and freshly cracked pepper. Stir well until the sugar is dissolved and the ingredients are fully incorporated.
  2. Marinate the Mushrooms: Remove the stems from the portobello mushrooms. Place the mushrooms gill side up in a shallow dish. Pour some marinade into the gills, flip the mushrooms, and pour the remaining marinade over the top. Let them marinate for 30 minutes, flipping occasionally to ensure even flavor absorption.
  3. Grill the Mushrooms: Heat a grill or grill pan over medium to medium-high heat. Once hot, place the marinated mushrooms on the grill. Cook for about 7 minutes per side, or until the mushrooms are tender and most of their liquid has released.
