Description

Honey Glazed Carrots are a deliciously sweet and spiced side dish featuring tender roasted carrots coated in a luscious honey, garlic, and butter glaze. Roasted to perfection with warm cinnamon and ginger, this easy recipe is perfect for complementing a variety of meals and garnished with fresh herbs for added color and flavor.

Ingredients

Scale

Carrots

  • 2 pounds carrots, peeled

Glaze

  • ¼ cup honey
  • 3 garlic cloves, minced
  • 2 tablespoons melted butter or ghee
  • 1 tablespoon olive oil
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Garnish

  • parsley, thyme or other herbs for garnish (optional)

Instructions

  1. Prepare Carrots: Dice the peeled carrots by cutting them on a diagonal into 1 to 1.5 inch pieces. If the carrots are large and thick, slice them in half lengthwise to ensure even cooking.
  2. Toss Carrots with Glaze: In a large mixing bowl, combine the sliced carrots with honey, minced garlic, melted butter or ghee, olive oil, cinnamon, ground ginger, salt, and black pepper. Toss thoroughly to coat all pieces evenly with the glaze.
  3. Roast Carrots: Spread the glazed carrots evenly on a heavy-duty sheet pan. Roast in a preheated oven at 425°F (220°C) for 25 minutes, tossing the carrots halfway through cooking to brown them evenly. For extra caramelization, you may broil them for an additional 2 to 3 minutes at the end.
  4. Serve: Transfer the roasted carrots to a serving dish. Garnish with freshly chopped parsley, thyme, or your choice of herbs for added freshness and presentation.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
  • Reheat leftovers in the microwave until warmed through, stirring occasionally for even heat.
  • Use a heavy-duty sheet pan to prevent warping and ensure even roasting.
  • For a vegan option, substitute the butter or ghee with additional olive oil or a plant-based butter.
  • If carrots are very thin, shorten roasting time slightly to prevent burning.
