Skewers:
- 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
- 1 red bell pepper chopped into large chunks
- 1 onion peeled and sliced into squares
- 1 tbsp sesame seeds
- small bunch of coriander/cilantro roughly torn
Instructions
- Prepare the Marinade: Mix all the marinade ingredients together in a small bowl, combining vegetable oil, sesame oil, minced garlic, ginger, dark soy sauce, and honey thoroughly.
- Marinate the Chicken: Place the chopped chicken breasts in a bowl and pour on three-quarters of the marinade, reserving the rest for basting. Cover and refrigerate for 1 hour to allow flavors to infuse.
- Soak Skewers: If using wooden skewers, soak them in water to prevent burning during cooking; metal skewers do not require soaking.
- Preheat the Grill or Griddle: Heat your BBQ or griddle until it is very hot to ensure a good sear and cooking efficiency.
- Assemble the Skewers: Thread alternately a piece of marinated chicken, a chunk of red bell pepper, another chicken piece, and a slice of onion onto each skewer until all ingredients are used. Discard leftover marinade from the bowl.
- Cook the Skewers: Place skewers on the BBQ or griddle and cook for 8-10 minutes, turning 3-4 times to cook evenly. Brush with the reserved marinade halfway through cooking. Check the largest piece of chicken to ensure it is cooked through with no pink remaining.
- Garnish and Serve: Sprinkle the cooked skewers with sesame seeds and torn coriander. Serve hot alongside salad and your choice of rice or potatoes.
