Description

  • 3 tbsp dark soy sauce
  • 3 tbsp honey

Skewers:

  • 2 chicken breasts (approx 350g/12.5 oz) chopped into bite sized pieces
  • 1 red bell pepper chopped into large chunks
  • 1 onion peeled and sliced into squares
  • 1 tbsp sesame seeds
  • small bunch of coriander/cilantro roughly torn


Instructions

  1. Prepare the Marinade: Mix all the marinade ingredients together in a small bowl, combining vegetable oil, sesame oil, minced garlic, ginger, dark soy sauce, and honey thoroughly.
  2. Marinate the Chicken: Place the chopped chicken breasts in a bowl and pour on three-quarters of the marinade, reserving the rest for basting. Cover and refrigerate for 1 hour to allow flavors to infuse.
  3. Soak Skewers: If using wooden skewers, soak them in water to prevent burning during cooking; metal skewers do not require soaking.
  4. Preheat the Grill or Griddle: Heat your BBQ or griddle until it is very hot to ensure a good sear and cooking efficiency.
  5. Assemble the Skewers: Thread alternately a piece of marinated chicken, a chunk of red bell pepper, another chicken piece, and a slice of onion onto each skewer until all ingredients are used. Discard leftover marinade from the bowl.
  6. Cook the Skewers: Place skewers on the BBQ or griddle and cook for 8-10 minutes, turning 3-4 times to cook evenly. Brush with the reserved marinade halfway through cooking. Check the largest piece of chicken to ensure it is cooked through with no pink remaining.
  7. Garnish and Serve: Sprinkle the cooked skewers with sesame seeds and torn coriander. Serve hot alongside salad and your choice of rice or potatoes.
