Chicken

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 slices mozzarella cheese
  • 4-5 tablespoons balsamic glaze

Instructions

  1. Prepare the tomato basil topping: In a medium bowl, combine diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to let flavors meld.
  2. Prep the chicken breasts: Optionally pound chicken breasts to an even thickness for uniform cooking or leave them as is. Coat each chicken breast evenly with olive oil.
  3. Season the chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning mixture evenly over all sides of the chicken breasts.
  4. Grill the chicken: Preheat the grill to high heat. Grill chicken breasts for 8 minutes per side or until fully cooked through and juices run clear.
  5. Add the cheese: Once cooked, place one slice of mozzarella cheese on each chicken breast. Close the grill lid or cover and allow the cheese to melt, about 1-2 minutes.
  6. Rest the chicken: Remove the chicken from the grill and let it rest on a plate for 5 minutes to lock in juices.
