Instructions
- Prepare the tomato basil topping: In a medium bowl, combine diced Roma tomatoes, minced garlic, olive oil, balsamic vinegar, fresh chopped basil, salt, and black pepper. Stir well to combine and set aside to let flavors meld.
- Prep the chicken breasts: Optionally pound chicken breasts to an even thickness for uniform cooking or leave them as is. Coat each chicken breast evenly with olive oil.
- Season the chicken: In a small bowl, mix Italian seasoning, garlic powder, salt, and black pepper. Rub this seasoning mixture evenly over all sides of the chicken breasts.
