Instructions

  1. Preheat Oven: Preheat your oven to 425°F and grease a 9×13 inch baking dish to prevent sticking.
  2. Prepare Stuffing: In a mixing bowl, combine softened cream cheese, minced garlic, parsley, dill, chives, parmesan cheese, salt, and pepper. Mix thoroughly with a rubber spatula until well combined and smooth.
  3. Prepare Chicken: Lay each chicken breast flat on a cutting board. Using a sharp knife, cut a slit about 3/4 of the way through the chicken breast horizontally to create a pocket. Season the inside of each pocket with salt and pepper.

  5. Coat with Breadcrumbs: In a plate, mix together panko breadcrumbs, garlic powder, paprika, salt, and pepper. Press both sides of the stuffed chicken breasts into the breadcrumb mixture until fully coated.
  6. Prepare for Baking: Place the coated chicken breasts in the greased baking dish. Lightly spray the outside of each chicken breast with olive oil spray for a crispier crust.
