For the Sauce:

  • 3 tablespoons honey
  • 2 tablespoons sriracha
  • 2 tablespoons tomato paste
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sesame oil
  • 3 garlic cloves, minced
  • 1 teaspoon crushed red pepper flakes
  • 1/2 teaspoon black pepper


Instructions

  1. Cook the chicken: In a large skillet over medium-high heat, drizzle 1 tablespoon of olive oil to coat the pan. Once the pan is hot, add the chicken pieces in an even layer. Season with salt and pepper and cook until lightly browned and cooked through, about 5 minutes, stirring as needed. Transfer the chicken to a plate and set aside.
  2. Sauté the vegetables: Drizzle the remaining 1 tablespoon of olive oil into the hot skillet. Add the sliced red and yellow bell peppers along with the sugar snap peas. Cook until the vegetables are tender, about 5 minutes, stirring frequently to ensure even cooking.
  3. Prepare the sauce: While the vegetables cook, whisk together soy sauce, honey, sriracha, tomato paste, apple cider vinegar, sesame oil, minced garlic, crushed red pepper flakes, and black pepper in a small bowl. Set aside.
