Instructions
- Preheat oven: Preheat your oven to the broil setting to prepare for melting the cheese at the end.
- Cook turkey: Heat a 12-inch skillet over medium-high heat. Add 1 tablespoon of olive oil and swirl to coat the pan. Add the ground turkey and crumble it with a spatula as it cooks.
- Sauté vegetables and spices: Push the cooked turkey to one side of the skillet. Add diced onion and red bell pepper to the other side. Sprinkle salt, freshly ground black pepper, chili powder, cumin, garlic powder, and smoked paprika over the vegetables and turkey. Sauté the veggies and continue crumbling the turkey until it is fully cooked through.
- Add remaining ingredients: Stir in black beans, frozen corn, diced green chiles, chopped cilantro, and salsa. Mix everything together well and cook until heated through.
- Top with chips and cheese: Evenly spread 10 tortilla chips over the skillet mixture and sprinkle 1 cup of shredded colby jack cheese on top.
- Broil: Place the skillet in the oven under the broiler. Broil until the cheese melts and turns lightly browned, about 2-4 minutes. Watch closely to avoid burning.
- Garnish and serve: Remove from the oven, garnish with additional chopped cilantro if desired, and serve hot.
