Description

  • 2 large chicken breasts
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • Flour for dredging

  • 1 tablespoon olive oil
  • 3 tablespoons butter divided
  • 8 ounces cremini mushrooms sliced fairly thin
  • 1 large clove garlic minced
  • 3/4 cup marsala wine
  • 1/2 cup heavy/whipping cream


Instructions

  1. Prepare the chicken: Cut the chicken breasts in half lengthwise to make 4 thinner cutlets. Season each piece with salt, pepper, and garlic powder. Dredge each cutlet in flour, coating evenly.
  2. Sear the chicken: Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Once hot, add chicken cutlets and cook for 5 minutes on each side until golden brown. Remove chicken from skillet and set aside; it will finish cooking in the sauce.
  3. Cook the mushrooms: Add remaining 2 tablespoons butter to the skillet. Add sliced mushrooms and cook, stirring occasionally, for 5 minutes until browned and tender.
  4. Add garlic and Marsala wine: Stir in minced garlic and pour in the Marsala wine. Let the mixture bubble and reduce for 3 minutes to concentrate the flavors.
  5. Finish the sauce and chicken: Pour in the heavy cream and stir to combine. Return the chicken to the skillet and cook for an additional 5 minutes, allowing the chicken to cook through and the sauce to thicken. Adjust seasoning with salt and pepper as needed. Optionally, garnish with chopped parsley before serving.

Notes

  • If using smaller chicken breasts, you may skip cutting them in half but extend cooking time slightly to ensure they are cooked through.
  • Use semi-sweet or dry Marsala wine for best results.
