Instructions

  1. Prepare Lo Mein Sauce: In a medium-sized bowl, combine chicken stock, oyster sauce, dark soy sauce, low sodium soy sauce, cornstarch, toasted sesame oil, brown sugar, grated ginger, and minced garlic. Stir well until the sugar dissolves completely.
  2. Marinate Chicken: Add the bite-sized chicken pieces to the prepared sauce and let them marinate while you prepare the vegetables.
  3. Boil Noodles: Cook the noodles in boiling water until they are al dente, about 1 or 2 minutes less than package instructions. Drain and rinse under cold water, then drizzle lightly with oil to prevent sticking.
  4. Stir Fry Chicken and Vegetables: Heat vegetable oil in a wok or large pan over medium-high heat. Stir-fry the marinated chicken until fully cooked, then remove it from the pan and set aside. Add the sliced vegetables to the pan and stir-fry for 2 to 3 minutes until tender but still crisp.
  5. Combine Noodles, Sauce, and Chicken: Return the noodles and the remaining sauce to the pan with the vegetables. Toss everything together continuously for 1 to 2 minutes until the sauce becomes thick, glossy, and coats the noodles evenly. Add the cooked chicken back into the pan and combine thoroughly.
