- 4 cups sugar
- 1 cup light corn syrup
- 3/4 cup water
- 3 egg whites
- 1 teaspoon pure vanilla extract

Instructions
- Prepare pans: Line 3 baking sheets with wax paper and set aside to use for dropping the divinity candy once ready.
- Cook syrup: In a 3.5 quart saucepan fitted with a candy thermometer, whisk together sugar, corn syrup, and water. Heat over medium heat until the sugar dissolves, stirring occasionally. Then increase the heat to high and stop stirring, cooking until the thermometer reads 250 degrees Fahrenheit.
- Beat egg whites: While the syrup is heating, use a stand mixer to beat the egg whites until stiff peaks form.
- Combine syrup and egg whites: Slowly and carefully stream the hot syrup into the egg whites while the mixer is running, continuing to stream for about 2 minutes. Add vanilla extract after the syrup is fully incorporated.
- Mix until set: Continue mixing on medium speed for 15-20 minutes until the mixture loses its shine and holds its shape when spooned onto wax paper. If the mixture or mixer gets too hot, pause mixing every 5 minutes for 2-3 minutes to cool down.
- Shape candy: Working quickly, use two spoons sprayed with nonstick cooking spray to scoop and drop the divinity onto the wax paper. Gently swirl the top for a smooth finish. If desired, top each piece with a pecan.
- Set and store: Allow divinity to set for about 1 hour. Serve immediately or store in an airtight container for up to two weeks.
Notes
- Using a cookie scoop sprayed with nonstick cooking spray can speed up portioning and create uniform sizes, but will not produce a smooth finish like using spoons.
- Ensure syrup reaches exactly 250 degrees Fahrenheit for proper candy texture.
- Cooling pauses during mixing help maintain proper consistency and prevent the mixture from becoming too soft.
- If mixture spreads when spooned, continue mixing until it holds its shape to achieve the right texture.
