Description

Irish Nachos are crispy baked potato slices loaded with sharp cheddar cheese, crispy bacon, jalapenos, tomatoes, sour cream, shallots, and green onions for a flavorful and satisfying snack or appetizer.

Potatoes and Seasoning

  • 2-3 large russet potatoes, washed, sliced into 1/8-inch thick rounds (about 2 pounds)
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons kosher salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Toppings

  • 2 cups shredded sharp cheddar cheese (226 g)
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1 large jalapeno pepper, seeded and diced
  • 2 Roma tomatoes, diced
  • 1/4 cup sour cream
  • 1 medium shallot, diced
  • 2 green onions, diced


Instructions

  1. Preheat Oven: Preheat your oven to 450°F and line one or two baking sheets with parchment paper to prevent sticking and ensure even cooking.
  2. Mix Seasonings: In a small bowl, combine kosher salt, paprika, garlic powder, and black pepper to create the seasoning mix.
  3. Coat Potatoes: In a large bowl, toss the sliced potatoes with the olive oil and seasoning mixture until the slices are evenly coated.
  4. Arrange Potatoes: Lay the potato slices in a single layer on the prepared baking sheets to promote even crispness while baking.
  5. Bake Potatoes: Bake the potatoes for 20 minutes, then flip each slice to the other side and bake for another 9 minutes or until the potatoes are golden brown and crispy.
  6. Combine and Add Toppings: Remove the baking sheets from the oven, combine the potatoes onto one sheet, and evenly sprinkle shredded cheddar cheese and crumbled bacon over the top.
  7. Melt Cheese: Return the baking sheet to the oven and bake for 3 to 4 minutes until the cheese is fully melted.
  8. Garnish: Remove from the oven and top with diced jalapeno, diced tomatoes, sour cream, diced shallots, and diced green onions. Serve immediately while hot and crispy.

Notes

  • For an air fryer version, season the potatoes and cook in the air fryer at 360°F for 15 minutes, flipping every 5 minutes until golden and crispy.
  • After air frying, add cheese and bacon, then air fry for an additional 1-2 minutes to melt the cheese.
  • Use parchment paper in the air fryer basket to prevent sticking.
  • Thinner potato slices (1/8 inch) ensure crispier nachos.
  • Feel free to customize toppings with guacamole, salsa, or your favorite hot sauce for added flavor.
