- 2 boneless, skinless chicken breasts (about 1.3 lbs. total)
- 1/2 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp freshly cracked black pepper
- 1/4 cup all-purpose flour

- 1 whole garlic bulb (about 8-9 garlic cloves)
- 1 cup chicken broth
- 3/4 cup heavy cream
- 1/2 tsp garlic powder

Instructions
- Prepare Chicken: Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets or use pre-sliced thin-cut chicken breasts. Season both sides evenly with Italian seasoning, salt, and black pepper. Then sprinkle all-purpose flour over both sides and rub gently to coat the chicken evenly.
- Cook Chicken: Heat a large skillet over medium heat and add olive oil and 1 tablespoon of butter. Once heated, add the coated chicken cutlets. Cook about 4 minutes per side until each side is golden brown and the chicken is cooked through. Remove chicken from the skillet and set aside on a clean plate, covering to keep warm.
- Prepare Garlic: While the chicken cooks, peel the garlic cloves from the bulb. Smash each clove lightly with the side of a large chef’s knife by pressing down firmly with the heel of your hand.
- Sauté Garlic: Add the remaining 1 tablespoon of butter to the same skillet used for the chicken. Add the smashed garlic cloves. Reduce heat to medium-low and sauté the garlic for 3 minutes until lightly browned and fragrant, stirring frequently to prevent burning.
- Make Sauce: Pour in the chicken broth and heavy cream. Stir in the garlic powder. Scrape the bottom of the skillet to deglaze and lift all browned bits. Let the sauce simmer gently for 8-10 minutes, stirring occasionally, until it reduces and thickens by approximately 50%. Taste and adjust seasoning with about 1/8 tsp salt and 1/8 tsp black pepper.
- Finish Dish: Return the cooked chicken breasts to the skillet and spoon the creamy garlic sauce over them. Let the chicken warm through in the sauce for a couple of minutes. Serve immediately, optionally garnished with fresh chopped parsley.
Notes
- You can substitute boneless, skinless chicken thighs for the breasts if preferred.
- For convenience, use 2.5 tablespoons of pre-minced garlic instead of fresh garlic cloves.
- Ensure to not burn the garlic in the sauce as it can turn bitter; sauté it gently over medium-low heat.
