Description

A flavorful and hearty side dish combining crispy bacon, tender Yukon gold potatoes, and fresh green beans tossed with ranch seasoning and garlic powder for a classic country-style taste.

Ingredients

Scale

Vegetables

  • 1 lb. green beans, fresh, trimmed
  • 1 ½ lbs. Yukon gold potatoes, baby, cut in half

Meat and Dairy

  • 12 oz bacon, thick cut
  • 4 tbsp butter

Seasonings

  • 2 ½ tbsp ranch seasoning
  • 1 tsp garlic powder
  • salt and pepper, to taste

Instructions

  1. Boil Green Beans: Bring a medium pot of water to a boil, add the green beans, and cook until bright green and tender, about 5 minutes. Remove using a slotted spoon and immediately transfer to a bowl of ice water to stop the cooking process.
  2. Cook Potatoes: In the same boiling water, add the potatoes and cook until fork tender, about 10 minutes. Drain carefully when done.
  3. Cook Bacon: In a large skillet over medium-high heat, cook the bacon pieces until browned and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess fat.
  4. Brown Potatoes: Add the drained potatoes to the skillet with bacon drippings. Stir frequently to brown on all sides.
  5. Combine Ingredients: Reduce heat to medium and add butter, green beans, ranch seasoning, and garlic powder to the skillet. Stir thoroughly to coat all ingredients evenly.
  6. Add Bacon and Season: Return the cooked bacon to the skillet, stir to combine, and season with salt and pepper to taste. Serve warm and enjoy.

Notes

  • Use baby Yukon gold potatoes for even cooking and a creamy texture.
  • Cooling the green beans in ice water after boiling keeps them vibrant and crisp.
  • If preferred, you can use turkey bacon for a leaner option.
  • Adjust ranch seasoning amount based on your taste preference for more or less flavor.
  • For extra crispiness, consider finishing the potatoes under the broiler for a minute or two, watching closely to avoid burning.
