  • 2 tbsp finely grated carrots
  • thinly sliced green onions


Instructions

  1. Prepare eggs: Slice the hard boiled eggs in half lengthwise. Carefully remove the yolks and place them in a medium-sized bowl.
  2. Saute cabbage: In a small skillet over medium heat, sauté the diced cabbage for 3 minutes until just softened. Remove from heat and let cool slightly.
  3. Make filling: Add mayonnaise and Dijon mustard to the bowl with egg yolks. Whip the mixture until completely smooth and creamy.
  4. Combine ingredients: Stir in the diced corned beef and sautéed cabbage until evenly combined. Season the mixture with salt and pepper to taste.
  5. Pipe filling: Transfer the filling into a gallon-sized ziplock bag, twist the top to seal, then snip off one bottom corner of the bag. Pipe the filling into the hollowed egg whites evenly.
  6. Garnish and serve: Sprinkle the deviled eggs with finely grated carrots and thinly sliced green onions. Serve immediately or refrigerate in an airtight container until ready to serve.
