Description

Christmas Cornflake Crackle is a delightful holiday treat featuring crunchy cornflakes coated in a buttery brown sugar mixture, baked to perfection, and finished with a rich semisweet chocolate dip. Perfect for festive gatherings or a sweet snack.

Ingredients

Scale

Base

  • 3 level cups cornflake cereal
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Chocolate Coating

  • 12 oz semisweet chocolate, chopped

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F and line a baking sheet with parchment paper to prevent sticking.
  2. Arrange Cornflakes: Spread out the 3 cups of cornflake cereal evenly on the prepared baking sheet to form a single layer.
  3. Make the Sugar Mixture: In a saucepan over medium heat, melt 1/2 cup unsalted butter and 1/2 cup packed brown sugar, stirring continuously. Once melted, keep stirring for 1 to 2 minutes until well combined and slightly thickened. Remove from heat and stir in 1 teaspoon vanilla extract and 1/2 teaspoon salt.
  4. Coat Cornflakes: Pour the melted butter and sugar mixture over the cornflakes. Gently stir to coat all the flakes evenly. Using a spoon or rubber spatula, spread the mixture and cornflakes into a rectangle shape on the baking sheet, pressing the cereal together to help it bind.
  5. First Bake: Bake the coated cornflakes in the oven for 5 minutes to help set the mixture.
  6. Press and Second Bake: Remove from oven and gently press the cornflakes together around the edges and center using a spoon or spatula to compact the mixture. Return to the oven and bake an additional 5 minutes.
  7. Cool and Break: Allow the cornflake mixture to cool completely on the baking sheet. Once cooled, break into chunks of your preferred size.
  8. Melt Chocolate: Place 12 ounces of chopped semisweet chocolate in a microwave-safe bowl. Melt in 30-second increments, stirring after each, until smooth and completely melted.
  9. Dip and Set: Dip each cornflake chunk into the melted chocolate, ensuring it is fully coated. Shake off any excess chocolate and place on a parchment-lined baking sheet. Optionally, sprinkle a pinch of salt on top while the chocolate is still wet. Let the chocolate set completely before serving. Enjoy your festive crackle!

Notes

  • For an extra festive touch, sprinkle colored sugar or holiday-themed sprinkles over the chocolate before it sets.
  • Use gluten-free cornflakes if you need this treat to be gluten free.
  • Store leftovers in an airtight container at room temperature for up to one week to maintain freshness.
  • If you prefer, substitute semisweet chocolate with milk or dark chocolate based on your taste preference.
  • Be careful not to overbake the cornflakes to avoid burning the sugar coating.
