Description

A quick and flavorful Chicken Cheesesteak Skillet recipe featuring tender chicken breasts sautéed with sweet bell peppers and onions, seasoned with Italian herbs and smoked paprika, and topped with melted provolone cheese for a comforting, easy meal.

Ingredients

Scale

Vegetables

  • 1 yellow onion, halved and thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced

Chicken and Seasoning

  • 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Kosher salt and fresh ground black pepper to taste

Other Ingredients

  • 2 tablespoons olive oil, divided
  • 1 cup shredded provolone cheese

Instructions

  1. Prepare the vegetables: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the sliced yellow onion, red bell pepper, and green bell pepper. Season generously with kosher salt and freshly ground black pepper. Sauté the vegetables until they become very tender, about 8-10 minutes, then remove them from the skillet and set aside on a plate.
  2. Cook the chicken: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the thinly sliced chicken breasts, Italian seasoning, smoked paprika, salt, and pepper. Spread the chicken out into a single layer and allow it to cook undisturbed for a few minutes so it can brown nicely on one side.
  3. Sauté the chicken thoroughly: Stir and continue cooking the chicken until it is fully cooked through and no longer pink inside, about 7-8 minutes total.
  4. Combine vegetables and chicken: Return the sautéed onions, peppers, and any accumulated juices from the plate back into the skillet with the cooked chicken. Stir well to combine all ingredients evenly.
  5. Add cheese and melt: Sprinkle the shredded provolone cheese evenly over the chicken and vegetable mixture. Cover the skillet with a lid and let it sit for a few minutes until the cheese is melted and gooey.
  6. Serve: Once the cheese has melted, remove the lid and serve the Chicken Cheesesteak Skillet hot, garnished as desired.

Notes

  • Use thinly sliced chicken breasts to mimic the traditional cheesesteak texture.
  • If you prefer spicier flavor, add a pinch of crushed red pepper flakes with the seasonings.
  • Substitute provolone cheese with mozzarella or American cheese for a different cheese flavor.
  • Serve with crusty bread or over rice for a fuller meal.
  • To save time, prepare the vegetables ahead or use pre-sliced peppers and onions.
