  • 1 avocado, diced
  • 5 burrito size tortillas, whole wheat or white, warmed

Dressing

  • 1/3 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 anchovy fillets, mashed finely to a paste (1 1/2 tsp paste)
  • 1 Tbsp fresh lemon juice
  • 2 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp minced garlic (1 clove)
  • Salt and black pepper to taste


Instructions

  1. Prepare Dressing: Whisk together Greek yogurt, mayonnaise, olive oil, mashed anchovy fillets, lemon juice, Worcestershire sauce, Dijon mustard, and minced garlic in a bowl. Season with salt and black pepper to taste until smooth and well combined.
  2. Toss Salad Mixture: In a large mixing bowl, combine chopped chicken, Romaine lettuce, grape tomatoes, and shredded parmesan. Drizzle the prepared dressing over the mixture and use tongs to toss gently, ensuring all ingredients are evenly coated.
  3. Add Avocado: Gently fold diced avocado into the salad mixture to evenly distribute without mashing.
  4. Assemble Wraps: Lay the warmed tortillas flat and place a row of the salad mixture down the center of each tortilla. Fold the sides and roll tightly to enclose the filling, tucking in ends if desired to prevent filling from falling out.

Notes

  • For grilled chicken, preheat grill to 425°F. Pound chicken breasts to even thickness and lightly brush with olive oil. Season with a mix of 1 tsp Italian seasoning, 3/4 tsp salt, 1/2 tsp pepper, 1/2 tsp onion powder, and 1/8 tsp garlic powder. Grill about 4 minutes per side until internal temperature reaches 165°F.
  • Use whole wheat tortillas for added fiber and nutrients or white tortillas for a softer wrap.
  • To keep wraps fresh longer, wrap tightly in foil and refrigerate, but avoid adding avocado until serving to prevent browning.
