Description

This Buffalo Chicken recipe features tender, marinated chicken breasts coated in a flavorful homemade buffalo sauce, cooked either stovetop or grilled for a perfect balance of heat and zest. The recipe includes a sweet and tangy glaze to adjust the spice level to your liking, making it perfect for sandwiches, wraps, salads, or tacos.

Ingredients

Scale

Chicken

  • 2-3 chicken breasts pounded thin (approx. 1 pound)
  • 3 tablespoons olive oil, divided

Buffalo Marinade

  • 1/4 cup Frank’s hot WINGS Sauce for more heat OR Frank’s ORIGINAL Hot Sauce for less heat
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Buffalo Glaze

  • Reserved marinade (from the buffalo marinade)
  • 1 tablespoon honey
  • 1 1/2 teaspoons lime juice

Instructions

  1. Prepare the marinade: Whisk together all of the Buffalo Marinade ingredients in a medium bowl. Measure out 1/4 cup and add to a shallow dish or freezer bag along with 2 tablespoons olive oil. Add chicken and toss evenly to coat. Marinate in the refrigerator for 2 hours up to overnight.
  2. Make the glaze: To the remaining marinade, whisk in 1 tablespoon honey and 1 1/2 teaspoons lime juice. Store the glaze in the refrigerator until ready to use.
  3. Rest chicken: Remove chicken from the refrigerator and let it sit at room temperature for 15-30 minutes before cooking for even cooking.
  4. Cook stovetop: Heat a large non-stick skillet over medium-high heat. Once hot, add the chicken and cook undisturbed for 3-5 minutes until nicely browned on one side. Turn chicken over, cover, and reduce heat to medium. Cook for 5-7 minutes more, depending on thickness, until cooked through. Remove chicken to a cutting board and let rest 5 minutes before slicing.
  5. Cook on grill: Alternatively, preheat and grease grill to medium heat (375-450°F). Grill chicken undisturbed for 5-7 minutes per side until cooked through (internal temp 160°F). Remove from grill and let rest 5 minutes before slicing.
  6. Glaze and serve: Brush the cooked chicken with desired amount of Buffalo Glaze to customize heat level. Serve as desired in sandwiches, wraps, salads, or tacos.

Notes

  • Watch the “how to make” recipe video at the top of the post for helpful tips!
  • The chicken is flavorful but mildly spicy without the glaze; add more glaze for increased heat.
  • Try tossing the chicken with your favorite BBQ sauce for a different flavor profile.
  • Perfect for sandwiches, wraps, salads, or tacos.
  • Total time excludes marinating time since it varies per individual.
