Ingredients
Scale
Buffalo Chicken Filling
- 2 cups cooked and shredded chicken
- 2 oz cream cheese softened
- 1/2 cup plain Greek yogurt
- 1/2 cup buffalo sauce
- 1/2 cup shredded mozzarella cheese
- 3 scallions chopped
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/4 tsp salt
Puff Pastry & Finishing
- 2 sheets thawed puff pastry
- 1 egg beaten
Instructions
- Preheat Oven: Preheat the oven to 400°F and line a large baking sheet with parchment paper to prevent sticking and aid clean-up.
- Prepare Filling: In a mixing bowl, combine cooked and shredded chicken, softened cream cheese, plain Greek yogurt, shredded mozzarella cheese, buffalo sauce, scallions, garlic powder, salt, and black pepper. Mix thoroughly with a rubber spatula until well combined.
- Roll Puff Pastry: Unfold one sheet of puff pastry on a floured cutting board. Using a rolling pin, roll out the pastry slightly to thin it.
- Spread Filling: Spread half of the buffalo chicken mixture evenly over the puff pastry, making sure to cover all edges.
- Form Pinwheels: With the short edge of the puff pastry facing you, carefully roll the pastry away from you into a tight log. Use a sharp knife to cut the roll into eight equal pinwheel slices. Repeat this process with the second sheet and remaining filling.
- Arrange on Baking Sheet: Place the pinwheels on the prepared baking sheet, spacing them at least two inches apart for even baking.
- Egg Wash: Brush the tops and sides of each pinwheel with the beaten egg to achieve a glossy, golden finish.
- Bake: Bake at 400°F for 25 minutes or until the pinwheels are puffed up and golden brown.
- Cool and Serve: Let the pinwheels cool for 5 minutes before transferring to a serving plate. Garnish with additional chopped scallions or cilantro for extra flavor and color.
Notes
- Use chilled puff pastry for easier handling and better puffing during baking.
- Substitute buffalo sauce with your favorite hot sauce if preferred.
- For a milder version, reduce the amount of buffalo sauce or omit it entirely.
- Ensure the filling is evenly spread to help pinwheels hold their shape during slicing and baking.
- Serve with ranch or blue cheese dressing for dipping.
