Green Bean Bundles
- 1 pound fresh green beans
- 6 slices bacon
Glaze
- 3 tablespoons butter
- 1 tablespoon brown sugar substitute
- 1 teaspoon garlic powder

Instructions
- Preheat the oven: Preheat oven to 400 degrees Fahrenheit. Place a wire rack on a large cookie sheet to allow for even cooking and crisping of the bacon.
- Prepare green beans: Wash and dry green beans, then trim off the ends. Take between 5 to 10 green beans and lay them together as a bundle.
- Wrap with bacon: Lay a strip of bacon flat and roll it around each green bean bundle securely. Place each wrapped bundle seam side down on the wire rack. Repeat until all green beans are wrapped.
- Make the glaze: Melt butter in a saucepan over the stove. Stir in the brown sugar substitute and garlic powder until well combined. Remove from heat.
- Glaze the bundles: Brush the butter mixture generously over the tops of the bacon-wrapped green bean bundles. Sprinkle salt and pepper to taste.
- Roast covered: Cover the bundles with foil to prevent burning and roast in the oven for 35 minutes until beans are tender.
- Roast uncovered: Remove the foil and continue roasting for another 15 minutes, or until the bacon is crispy and fully cooked.
Notes
- Use fresh green beans for best texture; frozen green beans may also work, but canned green beans are not recommended as they can turn mushy.
- Thin-cut bacon crisps better in the oven compared to thick-cut bacon which may remain chewy.
- Make sure to secure the bacon seam side down on the rack to prevent unraveling during roasting.
- You can adjust the amount of green beans per bundle depending on your preference, but 5-10 beans per slice of bacon works well.
