Description

Crispy and flavorful Air Fryer Zucchini Fries coated with Italian-seasoned breadcrumbs and parmesan cheese, perfect as a healthy appetizer or snack.

Ingredients

Scale

Zucchini Fries

  • 2 medium zucchini, cut into 3 inch x 1/2 inch sticks

Breading Mixture

  • 1/2 cup all-purpose flour
  • 2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp pepper

Egg Wash

  • 2 large eggs
  • 1 tbsp water

Breadcrumb Mixture

  • 1/2 cup Italian breadcrumbs or panko breadcrumbs
  • 1/3 cup parmesan cheese, finely grated

Additional

  • Cooking spray

Instructions

  1. Slice Zucchini: Slice your zucchini into 3 inch sticks about the size of a french fry, ensuring uniform size for even cooking.
  2. Prepare Flour Mixture: Combine the all-purpose flour, Italian seasoning, salt, and pepper in a large bowl and mix well to distribute the spices evenly.
  3. Make Egg Wash: In a separate medium bowl, whisk together the two eggs with 1 tablespoon of water until you achieve an even pale yellow color.
  4. Mix Breadcrumbs and Cheese: In another bowl, combine the Italian breadcrumbs and finely grated parmesan cheese and stir to blend.
  5. Coat Zucchini: Place the sliced zucchini into the flour mixture and toss gently to coat each stick evenly. Shake off excess flour.
  6. Dip in Egg Wash: Dip the floured zucchini sticks into the egg wash, coating each piece thoroughly.
  7. Coat with Breadcrumbs: After the egg wash, place the zucchini sticks into the breadcrumb mixture and turn several times to ensure an even coating. Repeat for all sticks.
  8. Prepare Air Fryer: Spritz the bottom of your air fryer basket with non-stick cooking spray to prevent sticking.
  9. Arrange and Spray: Place the coated zucchini in an even, single layer in the basket, making sure pieces do not touch. Spritz the top of the zucchini fries with more non-stick spray for crispiness.
  10. Air Fry: Cook at 385 degrees Fahrenheit for 10 minutes until the zucchini fries are golden brown and crispy.
  11. Serve: Remove from the air fryer and enjoy immediately with your favorite dipping sauce.

Notes

  • FREEZING: Avoid freezing zucchini fries because the high water content in zucchini causes them to become soggy when defrosted.
  • BAKING: For baking, place a cooling rack on a baking sheet to promote air circulation and crispiness. Spritz the fries with olive oil spray and bake at 425 degrees Fahrenheit for 22 minutes or until golden brown.
  • Cooking Spray: Use a light cooking spray to help achieve a crispy crust without adding excess oil.
  • Parmesan Cheese: Using finely grated or canned parmesan cheese works best for even coating and flavor.
