Instructions
- Slice Zucchini: Slice your zucchini into 3 inch sticks about the size of a french fry, ensuring uniform size for even cooking.
- Prepare Flour Mixture: Combine the all-purpose flour, Italian seasoning, salt, and pepper in a large bowl and mix well to distribute the spices evenly.
- Make Egg Wash: In a separate medium bowl, whisk together the two eggs with 1 tablespoon of water until you achieve an even pale yellow color.
- Mix Breadcrumbs and Cheese: In another bowl, combine the Italian breadcrumbs and finely grated parmesan cheese and stir to blend.
- Coat Zucchini: Place the sliced zucchini into the flour mixture and toss gently to coat each stick evenly. Shake off excess flour.
- Dip in Egg Wash: Dip the floured zucchini sticks into the egg wash, coating each piece thoroughly.
- Coat with Breadcrumbs: After the egg wash, place the zucchini sticks into the breadcrumb mixture and turn several times to ensure an even coating. Repeat for all sticks.
- Prepare Air Fryer: Spritz the bottom of your air fryer basket with non-stick cooking spray to prevent sticking.
