Description

This BEST Air Fryer Filet Mignon recipe offers melt-in-your-mouth tender steaks cooked perfectly using an air fryer. The steaks are seasoned simply with olive oil, salt, and pepper, then finished with a flavorful garlic herb butter that enhances the taste while resting, making the perfect elegant yet easy meal.

Ingredients

Scale

Filet Mignon:

  • 2 filet mignon steaks, about 8 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper

Garlic Herb Butter:

  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon fresh parsley, diced
  • 1 teaspoon fresh thyme, diced
  • 1 teaspoon fresh rosemary, diced
  • 1 clove garlic, minced

Instructions

  1. Bring Steaks to Room Temperature: Remove the steaks from the refrigerator 30 minutes before cooking to allow them to come to room temperature which ensures even cooking.
  2. Prepare Garlic Herb Butter: In a small bowl, mix together the softened butter, chopped parsley, thyme, rosemary, and minced garlic until well combined. Place the mixture in the refrigerator to harden while you prepare the steaks.
  3. Season Steaks: Pat the steaks dry with paper towels and rub them all over with olive oil. Season both sides evenly with fine sea salt and ground black pepper.
  4. Preheat Air Fryer: Preheat your air fryer to 400 degrees Fahrenheit to ensure it is hot and ready for cooking.
  5. Cook the Steaks: Place the steaks in the air fryer basket in a single layer without overcrowding. Cook for 10 to 11 minutes for medium-rare, flipping the steaks halfway through cooking. Use an instant-read meat thermometer to check for an internal temperature of 130°F for medium-rare doneness.
  6. Rest and Finish with Herb Butter: Once cooked, transfer the steaks immediately to a plate, top each with half of the herb garlic butter, and loosely cover the steaks with aluminum foil. Let them rest for 10 minutes. This resting allows the butter to melt into the meat and juices to redistribute for tender, flavorful steak.

Notes

  • A 7-ounce filet mignon will take about 9-10 minutes to reach medium-rare; a 10-ounce filet mignon will take about 12-13 minutes.
  • For different doneness levels in 8-ounce, 1.5” thick steaks: 9-10 minutes for rare, 10-11 minutes for medium-rare, 11-12 minutes for medium, 12-13 minutes for medium-well, and 13-14 minutes for well done.
  • Target internal temperatures before rest: Rare 120°F, Medium Rare 130°F, Medium 140°F, Medium Well 150°F, Well Done 160°F; after 10-minute rest these increase by about 5°F.
  • Cook steaks in batches if preparing more than two to avoid overcrowding and ensure proper browning.
  • Store leftover steak in an airtight container in the refrigerator for up to 3 days; the garlic herb butter can be refrigerated separately for up to 1 week.
  • To reheat, preheat air fryer to 350°F and warm steak for 3-4 minutes, taking care not to overcook.
